Sure Fire Recipe to get your Kids to Eat their Veg
Spaghetti with a twist - kids love it and will come back for more.
Ingedients:
1/2 kg mince = pork, beef or chicken - I find pork works best
Spaghetti
1/2 kg frozen mixed veg
1 brown onion
2 Cups of water
Tomato paste
6 slices bread
olive oil
shredded cheese
To prepare:
finely dice onion
spread thin layer olive oil over bread and cover with layer of shredded cheese
To Cook:
Cook spaghetti as per instructions on pack
Brown onions and mince - be sure to really brown mince - almost to barbecued stage - the darker brown the better (but dont burn).
Slowly add one cup of water while the meat and pan are hot. Scrap the bottom and sides of pan to ensure that any meat/onion stuck to the pan are removed (this really adds extra flavor).
Add tomato paste and water to taste. You can also season with salt, pepper, or other herbs to taste. Bring to simmer.
You can either add the frozen veg to this mixture and simmer a further 15 minutes or add the frozen veg to the spaghetti about 10 minutes before it is cooked. (my kids prefer the veg with the spaghetti).
Grill the cheese bread slices until cheese has melted and slightly brown. Once cooked cut into fingers - about 4 fingers per slice.
To serve:
Place spaghetti in center of plate or bowl. Ladle the sauce over the top and arrange the fingers of cheese bread around sides. Lightly sprinkle with any remaining shredded cheese and serve.
My kids would eat this every night. Nutrition - they getting carbs etc from the pasta, vitamins and minerals etc from the veg (remember is frozen is almost as good as fresh). Protein from the meat and cheese. HAPPY KIDS - Happy mum and dad
